Linear blancher to deactivate enzymes that can adversely affect product colour, flavor and texture, while improving vitamin retention.
WATER-BASED PROCESS:
Heat exchanger in each module. The water is heated by contact with steam in an internal heat exchanger in each module. When I say independent controlled temperature, I mean that it has probes to regulate the temperature in those modules independently.
